Hello. I am familiar with brewing but new to sours....So I forgot to hold on the hops for my Berliner Weisse and added 1 oz of German Tettnang. AA 2.3%. I was going to pitch Omega 605 lacto blend and better decided to put the lacto blend back in the refrigerator and just make this a "normal beer". I pitched the yeast and put it in the keezer to ferment. Any suggestions here? I am planning to reorder the grain and hops. Should I trust the Omega to be good for a few more days in the fridge? These days with Covid 19 all packages come at room temperature anyway. WIth liguid yeast I can make a starter, not sure with lacto....Regarding the "beer", should I expect something decent to come out?
 
The bacteria should be alright, but a starter is never a bad idea. Your beer should be fine too, no sweat.
