I forgot about a case I have been carbonating/conditioning in my living room since I have so many such cases sitting around. I figure this means I have arrived. Yay me!:ban:

Do you have all the cases dated. Hop aromas in such as a pale ale can fade fairly rapidly.

I know. I've got dates logged online. It's just finishing carbonating now, and I was thinking that waiting for my bitter to finish would be too long to wait for a change of pace from the stout and Porter I have in abundance at the moment. Then, I saw the case and thought, "That's right! Arrogant Bastard Clone has been sitting for two weeks and is ready for tasting!"

5 Gallons of 5 year old RIS sitting in the back of a closet. Not too much cardboard, lot of sherry.

Care to share?
