I have food dreams. I imagine tasting foods I've never had before. I just had one where I was drinking a really good wine. It was really dry, strong, herbal, sharp and minerallic like a strong australian white, but it had a full round richness to it like a good red that balanced the sharpness, and it was a rose.

Yes I really dreamed all this.

I went to the liquor store today and talked to the guy there that knows everything and got one of their best roses. I was really dissapointed, it just tasted like a wimpy red :(

I researched roses on cellar tracker and it looks like they are all like that, really fruity and mild. Miles away from what I dreamed :(

So I'm wondering if there's anyway I could make this at home? I don't know much about the different grape varieties and yeasts, how do I make a wine that tastes like what I dreamed?
 
What you're seeking doesn't exist. The very definition of rose precludes it from providing the attributes you're looking for:when a white wine is “not enough” and a red wine is just “too much”, rose wine represents the ideal solution.

Practically no rose wine is suited for the aging in bottle. They are wines expressly produced for being consumed soon after they are released on the market. The reason why rose wines are not suited for the aging in bottle is because of the lack of preservative substances: these wines have generally less acid than whites and contain a quantity of tannins very inferior to the one of red wines. As rose wines should be consumed in their youth, they can give pleasing and fresh sensations, usually of fruit, that cannot be generally found in other kind of wines.

Roses have their own place but mimicing white and reds isn't one of them.
