i gotta make gf beer for a hardcore bmc guy..help

So my dad has a gluten allergy and I told him I'd make a gf beer for him but I'm not sure what to do. I bought some briess sorghum syrup, corn, and w34-70.

I figure ill steep corn and boil syrup to a concentration of 1.040.. Throw in 8 ibu's of hallertau and call it a day. Lager it out a few months.

The other thing I got to be mindful of is it has to be low carb as he's a diabetic too ��

Anything I can do differently or add that gets me a gf beer with low carbs and not taste completely horrid for him?

In the mean time ill stick to my vanilla porter and hope ill age a little better than him
 
Well, between the gluten allergy and the diabetes, I feel like the better solution would be give up drinking (not fun at all, right?) That recipe seems like a decent place to start. You may want to consider 50/50 sorghum and rice syrup. Get him a 6 pack of redbridge and see what he thinks. That's A-B's GF beer, entirely sorghum. If its weird (sorghum twang), add the rice syrup. It's also 4% ABV and somewhat low in carb/calorie compared to others.

My first GF beer was the brewers best GF ale kit. That could be another place to start, and see if he likes that.

Yeah, my dad won't give it up.. He's tried granny smith cider, dry wine, etc but keeps going back to beer. He does get redbridge and can at.least stomach it.. But he hates the $9.50 a six pack when he can find it.
 
Maybe look into Amaranth, I've read it gives a good nutty flavor to beer. I'm growing some this year because it's supposed to be easy, self-sowing, and very productive
