So my keg was at 12psi for 4days and I got ancy and wanted to taste it.
Does that reset my carbonation back to zero? Its been at 12psi for 8 days and I still don't have much carbonation.
What's the solution here? Bump up the co2 and wait?
 
Tasting it does not reset your carbonation clock.

What temperature is the beer at that you are carbonating. Beer takes up carbonation best when chilled to serving temperature.
 
Its at its serving temp which is 49°. Pretty warm I know but my fridge is old.

Its a ipa OF of 1.065.
Im guessing the warmer temp would make it carb slower?

It probably just needs more time. 12 PSI at 49*F will give you about 2.1 volumes of CO2, which would be on the low end of the style guidelines for an American IPA. Maybe bump it up to 17 PSI to get more in the middle of the range? You'll still need to wait a couple weeks.
 
12psi is a little low for that temperature. According to my chart it'll only give you 2.10 volumes of Co2. You could bump that up to say 16psi for more carbonation. I'm still pretty new to the keg thing so I'm just reading off the chart.
