I had one of my beers that have been conditioning for only one week (I will open the next ones at the three week mark like planned). So far it looks promising, had my brew which is a clone of SN Torpedo vs. the original, mine was actually clearer and my fiance said she liked the taste of mine better (she said is was just a tad bit sweeter)

I did get a good head when pouring into a glass but it didn't retain well, will that get better with age?

It sure will carbonate more over the next week or two. If it tastes good after a week - then you made a really great beer ! Good luck with waiting two more weeks until you have another one.

Also don't get discouraged when it ends up not so clear. If you put them in the fridge and really let them chill more than an hour or so, you will prolly develop chill haze.

Head retention can be affected by a lot if things like how the glass was cleaned. However, some beers simply don't retain a head like Warsteiner Dunkel. I'd read up on all the reasons possible. It may be perfectly acceptable for the style.

After only one week of conditioning in the bottle, your description of the head is exactly what was supposed to happen. At that age the CO2 is coming out of solution very fast once you remove the beer from pressure (you opened the cap). Yes, the head retention will be just fine at three weeks.

Your beer is going to come out great.

I never worry about clarity, clarity is for judging competitions, and the only judge that matters to me, is me.
