I tried one of my Nut Browns on Friday, at one week in the bottle. I swore I'd wait until next Friday to try one just to see how it was progressing. Well, tonight I was cooking dinner with no other beer in the house. I thought, "what could it hurt to chill a bomber and drink it as I cooked dinner?"

So, I did. I am pretty surprised at how much the flavor has changed for the better in just a couple of days. Not perfect, but much better. I now swear to wait until 2 full weeks in the bottle to try it again.....(maybe).
 
We've all done it :mug:

And thats why you brew up a pipeline; so you can be patient enough to let them really ripen.
 
yup did the same last night while working on the kitchen cabinets... i have a brown ale that has been bottled for a week. figured I would see "how its doing"

low carb and still a bit sweet. I will wait the full two weeks next time.. (maybe)

good job on your brew!
 
haha...after my last batch was bottled i waited around...30 hrs or so :eek:
In my defense, i was a bit intoxicated so my self control wasnt at its normal level. It actually wasnt that bad though...;)
 
mmm....I'm guilty as well. After a week in the bottle, I had to crack open my 2nd batch (pale ale). I was surprised to find out that it is well carbed and tastes great! It will be interesting to see how the taste develops.
 
I always try one at the 1 week mark. Then I let em go another week or two.
