Hydrometer reading changes with temp?

I have been brewing for some time now but I just noticed something last night and this morning and I was wondering if someone could clear it up for me.

Last night I did an all grain batch of and English ESB. As I was chilling the wort, I snagged a sample at about 80 degrees and put it into my test tube. I put my hydrometer in it and it read 1.050. I finished chilling the wort, put it into my fermentation bucket, pitched the yeast and started cleaning up. I walked past my sample again and noticed it is now at about 1.054.... So I wanted to see what happened if I left it longer... This morning it is reading 1.060.

Anybody know whats going on here? Which reading should I be using?

Thanks for any insight on this.
