Someone gave me a big tub of unmilled black patent. He kept it in the fridge, but it has been out for a couple of weeks. It is in a sealed rubbermaid type container.

I tasted a bit and it is crunchy. Otherwise, I don't know what it should taste like. It wasn't bad tasting, but was bitter like eating cocoa nibs.

Sounds like it is usable? Should I store it in the fridge or the freezer? Will freezing hurt grains?

You don't have to refrigerate or freeze grain, and it is actually better if you don't. Just put it in a well sealed container in a cool place in your house. Unmilled grain can last for many months this way...
