My Belgian WIT is in the primary for the next few days which will add to a total of two weeks.

On Saturday, I will be getting it into the secondary and would like to add a few mangoes in there but want to make sure they are sanitized.

What is the best way to do this?

Do I literally dunk the mango into my star san solution?

Thanks for your help!

You could heat up the mango in a pot of 160F water for 15 minutes and then adding a little bit of pectic enzyme in secondary to prevent haze from the pectins.

or...

soak the mango overnight in vodka. This is what I do for fruit additions.
