I am going to try to clone the Deschutes Twilight (a favorite of my wife's) and for the Hops it reads:

Magnum 12.1% .750 oz Boil 1 Hr Pellet 19.2
Cascade 5.5% .5 oz Boil 30 min Pellet 4.5
Tettnanag 4.8% .5 oz Boil 15 min Pellet 2.5
Amarillo 10.2% 1 oz Boil 5 min Leaf 3.9
Amarillo 10.2% 1 oz Dry Hop 7 day Leaf 0.0

My question is this: my local brew shop had all leaf hops with the exception of the Tettnanag (Which I got in pellets). Will the hop schedule be the same with leaf vs. pellet? Also, does anyone know what the number after the pellet is referring to?
 
I don't know leaf v pellet (ie which has more kick or not) but the number after is the Alpha Acid % the hops should have (AA%). I had one hop that I picked up just looking at the recipe and it said maybe Tettnanag. Recipe was for like 5.5% and I got 4.0%.... I didn't care (not a hop head) but it can make a difference.

Or not as the beersmith podcast about hops mentions that they make a bale of hops, and then sample one portion of it and say 'this bale is 10%AA' when they might have hit a particulary High or low point in that bale and the rest of the bale is something else.
 
Oh Man... my math skills are suspect... would you mind helping me decipher the code for leaf instead of pellet for this recipe? For example is .75 oz of pellet equivalent to 1 oz leaf?
 
As far as I know an ounce of pellet should be the same as an ounce of whole hops. Just a lot smaller package.

well opened up beersmith for this. It looks like pellet is 10% more IBU's than leaf... so if you get 30 IBU's out of the pellet you only get 27 out of the leaf.

What this means is you need what is listed, plus abit (about 11% more... )

And the numbers are the AA%

So assuming your LHBS has leaf magnums at 12.1%, you will need .83oz of them
Cascade at 5.5% becomes .56 oz
Tettnanag 4.8% becomes .56 oz and then
Amarillo 10.2% 1.1 oz both at flame out and dry hop.

if they rate a little stronger (or weeker) at the LHBS, you are on your own for the math.
 
No. Pellets are calculated at a higher utilization. 10% higher, IIRC.

I have done a lot of reading on here (but not much posting) and never ran into that fact before. Thanks for the info!
