Would it keep it self the right temperature if i leave it in my spare room i have the house about 20 degrees Celsius?
 
Fermentation generates heat, so your mead will rise maybe 2-3 degrees above 20, maybe more depending on batch size.
 
SNA stands for Staggered Nutrient Additions, which means nutrients added at different times instead of all at the beginning.

People have figured out different regimens to avoid off-flavors and thus make better mead much faster.

I've used TOSNA (Tailored Organic SNA) and it works very well.
