How to determine active fermentation in a Stainless Conical?

Missing the visual aspect of a Cartboy having moved to a stainless steel Conical.

I'm seeing the pressure release gauge is showing 15psi which indicates there IS activity. Just not sure how much. Maybe it's just a perspective that no longer will be present when using a Conical...

I'm thinking the proper process is to use a blowoff device/tube and then when fermentation slows, move to the pressure relief value to add in Carbonation since this is a uni-tank.

Is this what most other do?
 
Checking the gravity of samples is best way to confirm fermentation has started and the rate at which it’s progressing.
