I just kegged a pale ale straight from the fermentor after 3 weeks. I then blasted it with CO2 at 30psi, shook, and set in the fridge at 12.3psi. It's now been 2 days in the fridge.

Should I have left the keg at room temp for a while before putting it in the fridge? Is there a conditioning time for kegged beer if it isn't primed? How long? Is it different at room temp versus the fridge?

thanks!

Kegging is really just like bottling, really. Sure, you can carb it up faster than bottling, but green beer is green beer whether it's carbonated or not!

I guess you're the only judge of when the beer is ready, but if it's a lower gravity un-complex beer it will be ready sooner than a bigger beer or one with lots of malt complexity or roasty flavors.

Beer ages much slower at cold temperatures, so if it's still green tasting, I'd keep it out of the fridge for a week or two. If it tastes about ready, then carb up and drink!

Is it okay to pull it back out of the fridge to let it age for a few weeks at room temp? Does it matter that it is already partially carbonated?
