Was transferring to secondary last night and wasn't sure things were good as the cider seemed off. This was after tasting a way too tart cherry cider I also transferred so my taste buds may be off.

Curious to know how soon one would be able to taste a cider that's gone south or vinegary...
 
I believe its usually in primary that things go bad. I cant say for sure tho cuz ive never had a batch infected. Tarts and sours are the flavors you are after with fruit however. Are you sure its vinegar you are smelling?
 
Depends, the cherry may need to be sweetened in the cup to taste. I've noticed with 'sour' ciders they tended to be better after a little sweetening.
