How shall I start learning and building temp control to gas burners?

Time has come to get down to business and get serious on this one.
I have been searching for a solution for days, but I need help from you guys to totally understand this.

I'd like to mash in a stainless steel tank and maintain temperature through stirring and a controlling a gas burner.

I'll get an electrician to assemble what is necessary for this; however, I must understand first how it works and what to buy (I am trying to save as much money as possible).

So, here is what my idea is about temperature control and hopefully you guys can guide me to understand how it really works and what I must buy to put this future system together.

The idea is to:
-use natural gas hooked up to a regulator
-this regulator would be connected to a temp sensor placed in the pot and the actual gasburner
-the gasburner will be equipped with a safety light.

All these components communicate and when the temp falls below the desired temp, the buner fires up. When it hits the target temp, it turns off.

Now....I have no clue what the best, cheapest, internationally available components are and how to assemble them.

That's what I need help with please.
