I brewed a pecan brown ale about a month ago and I'm ready to keg it. I don't usually use extracts since I prefer whole bean flavor, but I picked up some homemade bourbon vanilla extract at a local farmers market and would like to try it out. After talking to the shop owner that makes it, he told me to use it in the same amount as a normal extract, as it's just as potent as store bought vanilla.
Any ideas on how much to add? I don't want to overpower the pecan flavor, but I'd like the vanilla bourbon notes to be noticeable. I was thinking a tablespoon and a half for 5.5 gallons.
