I just put my first batch, a merlot kit, into secondary and realized I wasn't sure how much ullage to leave. I've looked for info and found varying amounts. How much space do you folks leave? I left only about an inch (no wonder I had to use a whole bottle to top up). Should I leave more than an inch? Thanks in advance.

It depends on the kit- if you are to degas next, you normally don't top up so that you have room to degas. If you've already degassed, you top all the way up. The instructions usually are pretty clear on the amount of headspace to leave.

Thanks, Yooper. Actually my kit is silent on this and many other things. It's a William's Brewing kit and it seems their big thing is simplicity. There are probably 150 words of instructions on the side of the box and that's it. Anyhow, since it's going to sit in secondary for 12 weeks, I figure fairly full is the way to go.
