how much ginger to use

12# sage honey
6# orange blossom honey
2 sticks of cinnamon
20 lbs of peaches
2 vanilla beans split at secondary

i almost have everything together just curious as to how much ginger i should be using. will be pitching d47 with nutrient and energizer. also should i be using a pectic enzyme with the peaches i heard they have very low pectin and im not too worried about clarity for finished product

Every time I've ever used peaches the product never clears, so I suggest at least using some pectic enzyme. AS for the ginger, I'd say for that use maybe an ounce? depends how much ginger taste you want.
