how many psi does it take to serve beer from the 5 gallon kegs

Depends on the length of your tubing and the inside diameter. For 3/16" ID tubing 5 feet long I think 12 PSI is about right. I don't have a table in front of me but I think that's a decent estimate.
 
Off topic: Buford, I love the new avatar, man!! Cracks me up. It's never Lupus!
 
Also you can just experiment start at 10-12 psi and drop the pressure if you get to much foam
