How long would you say to condition a Belgian Trippel? I started fermenting it about 2 weeks ago and today I transferred it into a Keg. I am going to let the Keg sit at room temp in the closet. I was thinking about 2-3 more weeks and then put it in the Kegerator and carbonate it.

What would you say? I have never made this type of beer before.

It has 11lbs of fermentables for a 5 gallon batch.

I typically age every beer for 4-6 weeks minimum. For higher gravity beers, I add more time. Since this is a trippel, I'm assuming your OG was in the neighborhood of 1.080, which I would age for at least 2 months.

I agree. For a brew this big, 2 months is minimum. It will get better if you let it sit for at least 6 months.

It gets progressively better, I made one that was ok at a month, but after 6 months was much better. I had one tucked away that I tried after about a year and loved it.

My last Tripel was diamond bright after four months of aging. I don't think it improved in flavor or aroma during month four, just appearance.

Three months, that's my answer.

The longer you let them sit the better it will turn out. Belgian Tripels are worth the wait. I agree with the above, at least 2 months.

I bottled a Tripel in the middle of May and I have no intention of even looking at it until New Year's Eve.
