Pliny the Elder Clone just got siphoned into bottles after 2 weeks in Secondary. Any one have advice on how long I should wait until cracking one?

as soon as it is carbed enough. I drink IPAs under 3 weeks and that is with a dry hop. These hoppy beasts deserve to be drank fresh.

My pale is 11 days old and 5 days into it's dry hop currently. I will start the crash cool this weekend and have it in a keg and carbed days after that.

your biggest enemy is the yeast not floccing out in time so either crash cooling with a possible gelatin fining or filtering would be the best way to clear your beer if needed. Just make sure you've hit your gravity numbers though. With proper yeast amounts and temp control you shouldn't have a problem.

I opened one today at lunch that I bottled 4 days ago. It was tasty and there was carbonation. Normally i wait at least a week but I used Bohemia bottles and was concerned about how well they sealed. I will wait another week before opening another
