How long do you leave your keg in the fridge before you tap it?

are there any advantages to letting a keg age?
 
it depends on the beer style. no reason to age a hefeweizen beyond the time needed for it to carb up correctlys. a barleywine on the other hand...
 
One to two weeks in cold storage, once kegged...It takes that long to properly force carbonate anyway.

Aging depends on the beer. Low gravity beers are generally imbibed young while high gravity and dark beers generally need more time to mature.
 
Most people say a minimum of three week for a normal beer. I start sampling around week one, and by about 2 1/2 weeks I'm pulling the tap frequently.
 
3days for a Wizen, 3 weeks for anything else (I set and forget everything else, and use the 30PSI for 2 days on my Wizens)

I age everything in the keg for the apropriate time before chilling. (I have 2 full kegs hanging out in the brew closet)
 
I try to stick with the 5 weeks from grain to glass method. You will be much happier with the results if you wait (the exception of course is Hefes).
 
I generally age it as long as it takes for me to get a tap open (granted I still bottle my big beers.) This generally allows me to age them for 1-6 weeks til I have a place open for them. Now that I've accumulated so many kegs, the delay seems to be getting longer and longer, so I think its safe to say they're well aged.

Which reminds me that I need to either update or be rid of my signature, as its always wrong.
 
I keep my beers in the fermentor for at least 4 weeks and then keg and put it on the gas at serving PSI, then wait and be patient.

I use to do the high PSI for a couple of days then back down but found that I was getting way too much foam. My first attempt at patience is happening right now with my Dead Guy clone. It's been 1.5 weeks and it is doing well.
