I will be making my starter this evening, which I will need to step up a couple times for next weekend's lager brew.
Do you think I'll be ok to store my extra wort (for the step-ups) in the refrigerator for later on in the week, or is it best just to freeze it?
I figure on storing the wort in 2-litre coke bottles after squeezing as much air out as I can and then re-boiling briefly and cooling before adding to my yeast starter as the week goes on.
How long, more or less, must I ferment my starter before cold crashing and stepping up?
