If I let the hops I'm growing, dry on the vine, would they be a suitable replacement for "aged hops" for use in Lambics?

If you let them dry for 3 years or so, yes.
That's if you want to be a purist. If you don't care that much, you can use a very small amount of a very low alpha acid hop (hallertau tradition or something else <3%AA like that).
