First time brewing, first time posting and I don't know if i'm doing either correctly.
I received a gift card for my local brew store for Christmas, it was enough to get equipment and a beer kit. My choices were limited and since I'm the only one in my family who likes most good beers, I figured I would get a wheat that everyone could enjoy. I bought the wiezen and decided I didn't want a plain wiezen. So I replaced the dryed yeast in the kit with American Ale yeast and added an oz. of Ahtanum hops, along with the provided bittering and aroma,to the boil and I'm planning on dry hopping with another oz. of the same. anyone?
Just looking for input/advice/opinions.

Also, I ended up with 1.5 g's of wort , I'm worried that having to add 3.5 g's of water will give me a watery beer. Anyone?
 
there is certainly nothing wrong with making an above-average-hopped weizen - that's the great thing about brewing, you can do what you want. experimentation is the best way to learn. that being said, there is a reason why most weizens aren't heavily hopped: too much hop will mask the uniqueness (wheat-ness?) of the wiezen. sorta like putting hot sauce on delicate white fish - at a certain point, you won't be able to appreciate the fish anymore. then again, some people like hot sauce more than fish :) you're decided to use a non-weizen yeast, so it looks like you're drifting away from the style anyways. off you go.

if you're looking to brew something that everyone in your family will enjoy, even the non-good-beer-drinkers, it might be best to go easy on the hops. the bitterness might turn them off. your extra two oz of hops are probably going to be fine, tho.

regarding your volume/dillution question, what was the OG of the wort? that will be your best indication of how thick/watery the beer will be. there is no hard-and-fast wort/cooling water formula that i'm aware of, it's all about how concentrated your wort is.
 
Yeah, originally I was going to do a Blue or Strawberry wheat and at the last minute went for the hops.
oh well more for me I suppose.

If you bought an extract kit that was intended to be 5g, then there is nothing wrong with topping off when you rack to your carboy, but you should monitor your OG until you hit target which means you may not get exactly 5g, but you should be close.
