I have a recipe that calls for Pride of Ringwood hops (9.3%aa)--any thoughts on a good substitute as I can't get locally.

Also, I am having trouble getting spaltz but assume I can subsititue saaz???

any thoughts?

Northern Brewer, Chinook, or Galena should substitute well. Hallartau for the Spaltz should work well.


I second the choice of Galena! Also, on the Hallertau. German Tettnanger would work as well.
 
What about Target as a substitute for Pride of Ringwood--I see they have similar AAU %...
 
Best? Depends on the style. If I only had four hops to work with, they would be columbus, cascade, fuggles and EKG. But I don't do belgians or pilsners.
 
Any of the american versions of "noble" hops would work, crystal, liberty, sterling, ultra.
I like sterling. I have them growing in my backyard and they are way hardier than the saaz that they are bred from.
