Yeah don't touch it. Once you FG gravity is stable then throw that bad boy in the fridge for 2-3 days so all that crap sinks to the bottom and then siphon all the tasty beer from above the trub leaving it all behind.
 
I dry hop almost exclusively with free-swimming pellets, and I always give the carboys a rock or three to re-sink the pellet mush each day over the 4-5 days before I cold-crash it to the bottom.

Even though I'm absolutely anal about CO2-flushing the head space (heck - I hook up CO2 when I cold-crash so the fermenter doesn't suck in air) I don't like seeing that thick raft on the surface. By the 4th day it's almost all sunk, though I suppose I should do a control batch to see if the rocking had anything to do with that ;)

In any case, a good rocking isn't going to hurt the beer. If you're going to cold crash it, it's going to all settle out with a bang anyway...
