I remember my first double IPA experience, it was DFH 90. So bitter I couldn't finish the bottle. A few years later, and I can down a Ruination without thinking much about it, and DFH 90 now seems like a malty double IPA to me. I'm sure if I gave up hops for awhile my lupulin sensitivity would return, but I prefer being able to enjoy both malty and hoppy beers.
I find the same pleasure with hot peppers.
The legendary 7POT pepper was untasteable and left me nearly throwing up 3 years ago.
Now, with a great deal of tolerance, I can enjoy and comment on the flavor, even though it is still an off the map face melter.
The salt de-sensetization is not cool! More salt is bad for you.
