6493D83E-6DC3-4983-99E9-7DD640F8F291.png I have brewed with mosaic several times but never with simcoe. From what I have found it seems they make a good combo. I’m looking for feedback on the hop quantities/ratios and additions in the recipe I put together. It’s for a five gallon batch. Grain bill is 12lb brewers and 1lb c20.

The recipe looks OK for a Pale Ale. Mosaic is a daughter of Simcoe, which is why usually they pair well together. Mosaic can bring blueberry, pine, citrus, generic tropical, with Simcoe bringing in pine and resin notes, earthy and sweet citrus. So the combo will definitely be good.

1 lb Crystal 20L is a lot and will add sweetness to the beer, maybe more than yoiu think, due to the amount of hops you are planning on using.

I would just get rid of the Crystal malt altogether for any pale or IPA recipe. Flaked wheat, Flaked oats, Malted oats, maybe a bit of White wheat, Rye, Spelt, 15-25% Vienna can be used as an alternative. My personal opinion and taste says that any hop forward beer, will be better, cleaner, crisper and brighter using only base malts.

I’ve brewed all of my IPAs with that graibill (actually typo I meant c10) and have enjoyed them all. I’ve come across a lot of the anti crystal malt in IPA stuff, so I guess I’m not opposed to trying a batch without it.

I've brewed IPAs with Crystal malt when I first starting brewing and dropped it altogether after a while. For me, the change brought a better, brighter flavour in the beer.

That's a very good hop combo :) I used them a lot last year, I have found adding Medusa, Galaxy and Falconers Flight with those 2 works very nice as well, in IPA's and especially NEIPA's. If you like your grain bill it's your beer for you to enjoy however I would swap the crystal for 1.5 lbs Vienna malt (10%'ish)if you ever wanted to try something different to compare. Hope you enjoy your beer

Mosaic will stomp all over Simcoe 1:1 in my opinion. I would change the ratio to favor Simcoe, perhaps 2/3 Sim 1/3 Mos.

Do you have more hops? I’d recommend a much larger DH addition than 3oz personally.

Sounds like you’re just going all Simcoe. In the future if you are blending hops I’d base where you use the hops more on how they smell. Use more of the hops that smell the best in the dry hop vs in the kettle. Also instead of blending them in equal proportions at each stage favor one versus the other. Say mostly Simcoe in the kettle and mostly Mosaic in the DH.

Also for future reference if you’re using Mosaic in the dry hop I find thy you get a better expression of the best aspects of Mosaic at temps around 58*. Much more interesting fruit character and less sweaty feet/stank that can be so prevalent in a lot of Mosaic out there.
