New guy here but not new to home brewing.
Been brewing for about 5 years now. Just don't get to brew as often as I would like - way too busy with work.

Over the past year, have accumulated quite a hop collection (e-bay bids!)
Got them all at good deals, now I'm trying to figure out what to brew.

Requesting hop combination suggestions (not good at that yet.)
I've done a few Smash brews, kit brews, etc.

Could really use input on which hops pair best for flavor/aroma and with suggested beer types!

All hops are pellets, 2015, and bought during cold times and immediately stored in a sub-zero freezer.

I probably should add grain recipes to apply the above.

I've got 40lbs of Crisp Maris Otter grains, 6 - 3lb bags of Bavarian Wheat DME, 1 Light DME, 1 Dark DME.

Planning to do 8 batches (5 lbs of grain, 1 bag of DME, to get 10lbs equivalent with 1.05 Starting Gravity.)
This should give me 8 good Pale batches to try the hops with (1 will be more caramel flavors with the Dark DME.)

I've also got 2 other all grain batches prepped - but no hops allocated to them yet.

1) 10 lbs Pilsen, 1 lb Rye, 1 lb Red Wheat, 1 lb Vienna -- This will be a Saison batch
2) 5 lbs Pale, 2 lbs Rye, 2 lbs Wheat, 2 lbs Oats -- This will be a Rye Pale

Some of my favorite combos are:

Amarillo/Simcoe
Citra/Galaxy
Citra/Mosaic
Citra/Mosaic/Galaxy

I usually brew American IPA's.

Oh, .... sorry. Did you ask a question? I was too busy salivating over your inventory of hops :ban:

Anyway .... my favorite IPA combo is citra/mosaic. I recently did an APA with just Mandarina hops (bittering, 5 min, hop stand & dry hop) and orange peel. Very refreshing with a hint of orange.

Thanks for the tips!

Brewing a simple wheat with Glacier hops today, and then for some kick,
adding 1 tsp each of Pink Peppercorn and Sichuan Peppercorn for 5 minutes.

5 lbs Fawcett Optic
5 lbs White Wheat

BIAB mash @ 150 for 60-90 mins

Then I usually do a 175 degree mash out pot with a couple of gallons of water.
pull out the grain bag from the main mash pot and put it in the 175 degree temp for 10-15 mins.

That gets added in back to the main pot (which has been heating up to boiling during the mash-out.)

2 oz Glacier @ 60/10/5 and then 2 oz of Glacier for 7-days dry-hop.
Also adding 1 tsp each of Sichuan Peppercorn and Pink Peppercorn @ 5 mins.

Using Safale WB-06 Wheat to ferment.

Centennial/Cascade is my favorite combo, and I believe I'm not the only one.............
But, my god, I look at your lineup, and have a happy coma, a happy hoppy coma. It must be nice to be you. :D
