I was wondering if anyone knows what the taste/aroma difference is when adding different hops at different times in the last 25 min of the boil. I have read about Hop usage times --http://www.babblehomebrewers.com/attachments/article/68/hopusage.pdf
--but don't have the experience to know how that really translates in taste.
For instance, say I want to add a total of 1 oz of both Simcoe and Amarillo. What would change if I added all 2oz at 15 min, vs say 0.5 Simcoe at 20min, 0.5 Amarillo at 15min, 0.5 Simcoe at 10min, and 0.5 Amarillo at 5min?
Or am I just over thinking all of this?

Meh, I don't like generalizing like that chart. I agree that you won't get much flavor from a 60 minute addition, and you won't get any bitterness from a flameout addition. But I do IPAs with 60 min, 10 min, 0 min and dry hop additions and get tons of hop flavor along with the aroma. Even with a 10 minute addition you'll retain plenty of flavor.
 
Do what I did - look at a few recipes then try your own timing. See what comes out. Not only will everyone here have a different opinion but also your taste might (will) vary from others. Be brave! :mug:
 
I have great success with 15, 5, and flameout, and if I feel extra liberal I'll do 20, 15, 5, and flameout. And of course dry hop for both :)
