I am going to add a pound of honey to my weissen, should I add at the beginning of the boil or more towards the end, I was thinking around the 15 minute mark. Also, what is the difference between using regular honey and clove honey?
I think the timing of adding the honey depends on how strongly you want to taste the honey. The earlier in the boil, the less you will taste the honey, but it will still add the fermentables. The later in the boil you add the honey, the more you will taste it. Same goes for the type of honey. Which taste do you prefer?
believe it or not honey can have a ton of different flavors. Normally I just use plane old everyday white honey because all I want are the fermentables outa if but here check this out . . .
i would have to say that a mild hint of honey would be best, I spent some time in Bavaria over the summer and I want to make something similar, but not a clone, of what i had there. I'm think halfway through the boil would be good, it would boil most of it out but still leave a small trace behind...
