Honey taste w/o the added sugar

While trying to improve upon my Wheatstone Bridge recipe, I have been trying to get more of a honey floavor. The problem is, I do not want to add more fermentable sugar to the mix. Is there anything out there such as a honey extract or flavoring that I could add that will give me the flavor of honey but without the sugar?

+1 on the honey malt. I would say you could just add about 8 ounces or so of honey malt and not remove anything else from the recipe.

I love the name Wheatstone bridge for the beer! and then I saw the high voltage brewery avatar, Awesome! is it a hefe, belgian white, ...?

Thanks, I am trying to keep all the names electrically themed.

The beer is my spin on an American Wheat beer with the addition of orang and honey.

Just to help you guys help me out. I use an extract kit from northern brewer and I add 2lbs of orange blossom honey after the boil. Im at work, and do not have my gravity readings, but the final ABV is 7.6%. I am pleased with the ABV but would just like more of a honey note as the 2lbs I currently add adds more aroma than flavor IMO.

I am sure I could add the honey somewhere else in the process and that would help, but I am still learning and not sure on the route to go.

I like the idea of using the honey malt, but if I would go that route, where would I add that to the boil and for how long would you suggest.

You'd steep it before adding your extract.

Actually what you're brewing sounds very similar to my honey wheat ale. Like yours it's an American wheat. I steep half a pound of honey malt, then I add some orange blossom honey with 3 minutes left in the boil. I add Centennial hops with about a minute left.

The beer comes out sooooooooo good.

I thought you had to mash honey malt? You can get the flavors just from steeping?
 
I was wondering about this myself. JW Dover carries 8oz bags of honey malt,& I'd love to use some in a Belgian White or Hefeweitzen With some orange zest. I was hoping to be able to get the honey effect out of the grains by just steeping them with some Carapils before adding DME's,etc.
 
Well I just put an order in for some honey malt, so I will try that route.

Hey Crooked, how long would you suggest steeping the grains before adding the extract?

*****UPDATE*****

Thanks for the info guys. Just poured my first glass last night and I must say,... the honey malt did the trick and gave me what I was looking for! I steeped at 160 for 1 hour and removed the grains. Followed up with the usually recipe and added the honey at the end of the boil. i did opt to up the honey from 2lbs. to 3lbs.

The verdict... while the abv did go up to 8.6% from the added pound of honey, I feel the honey malt added a bit of flavor to offset the tast and mellow it out. This turned out to be very, very drinkable and enjoyable,... even if a few will do you in ;-)

Will add a pic tonight of the brew to the "Post a pic of your pint" thread.

Possible to steep in full boil volume or would it be better to do the 3.5 gallon steep then add the other 3 gallons?
