Hey guys,
So after asking my lhbs if they had any Candy Sugar and getting the repsonse of " what is that ", i decided to have a go at making some for myself.
This stuff is pretty expensive over here at nearlyv£7 in places for 500 grams.
So i went out and spent 80p on simple can sugar and ended up this, not bad for a first attempt i think.

Thanks for the link, very helpful as im going to do another batch of it in a couple of days and will go darker
 
I've done many inverted sugar recipes and great success doing this. However, it is not a true substitute for Belgian candy especially the syrup form. When using refined sugar you wind up with mostly just caramel flavors. You can adjust this with spices. But you will never quite achieve the flavor profiles in Belgian brewing if you do not use a more unrefined product.
