With the holiday season over, I have a lot of kits piled up that am currently working on getting through. I have a pot of Chocolate Milk Stout boiling right now...

But I digress... If I were to brew up a batch of Imperial Blonde Ale and try to infuse apricots to make my own version of Magic Hat #9, does anyone have any ideas of how many apricots I should put in the carboy for secondary fermentation and flavoring?

I decided to try doing this Milk Stout before I give this next one because it has me put coco nibs for two weeks, but the amount of apricots is causing me questions.

I usually try for 2lbs per gallon when I use fruit. Just be careful that an apricot does not get stuck in the neck of the carboy. It can explode send glass and beer everywhere.
 
I have used apricots only once, and I used 3 pounds in a 5 gallon secondary and it took a long time for the apricots to finish fermenting. I added apricot extract at bottling, and way over did it. If you are patient, you can have a really nice beer in six or so months.
 
So if I am doing a 5 gallon batch, you think 10 lbs or apricots? That seems like a lot.
 
Yea I wouldn't put over 2 pounds. 10 pounds is way too much, maybe he meant 2 gal for every pound.
 
Depends if you're using puree or not. When I use whole fruit, I use 6lbs per 5 gallons, puree is roughly half of that.

Apricot is a rather strong flavor, though. I'd probably start out with 1.5lbs of puree and go from there. The apricot flavor in #9 isn't overwhelming.

No I meant 10lbs I have done about ten fruit beers now and that is about the middle ground. I've gone n e where from 5lbs-15lbs in 5 gallons. The fruit is the deciding factor. Very strong and sour fruit go less but a lighter more mellow fruit like apricot I would go with 8-10lbs, this is what I use in my peach cream ale and it is perfect.
