Ok guys, im about to attempt to do a bitter/sweet brown Ale, but more on the side of Bitter style since I'm more of an IPA guy.. I can up with a recipe and wnated to see if anyone had any suggestions, more along on how much Centennial I should use either at boil and dry hop or both..


Amt Name Type # %/IBU
(boil a gallon of water to 160f, hold for about 10 min with the grain)
-8.0 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 1 28.6 %
-4.0 oz Chocolate Malt (350.0 SRM) Grain 2 14.3 %

Add 6lb LME bring to a boild then add

-1.00 oz Northern Brewer [8.50 %] - Boil 60.0 min Hop 3 44.7 IBUs

Boil for 30 min then add (some friends suggested adding honey at the end, for more sweet taste.. ?)
-1 lbs Honey [Boil for 30 min](1.0 SRM) Sugar 7 57.1 %

Add Cascade Hops at the 15 min mark..
-1.00 oz Cascade [5.50 %] - Boil 5.0 min Hop 5 5.8 IBUs

Pour Wort into Primary that has 5 gallons of water, cool to about 80, pitch
-1.0 pkg American Ale (Wyeast Labs #1056) [124.21 ml] Yeast 6

Now here is the questions where im at, I used Bee Smith to adjust some values and wanted to add in at boild start
-0.50 oz Centennial [10.00 %] - Boil 60.0 min Hop 4 23.9 IBUs

The , maybe dry hop for 4 days or so (in primary or secondary carboy)
1.00 oz Centennial [10.00 %] - Dry Hop 7.0 Days Hop 8 0.0 IBUs

This will get me to about

Est Original Gravity: 1.010 SG
Measured Original Gravity: 1.046 SG
Est Final Gravity: 0.999 SG
Measured Final Gravity: 1.010 SG
Estimated Alcohol by Vol: 1.4 %
Actual Alcohol by Vol: 4.7 %
Bitterness: 74.4 IBUs
Calories: 151.6 kcal/12oz
Est Color: 14.3 SRM

So a bit light on the ABV.. not sure how i can bump that up a tad..

anyhow any thoughts.. ? Plan on maybe testing this out this week..

So you plan to do a 1 gallon boil? If so your hop utilization won't be near as good as you think.

If you want any honey flavor, add to the fermenter, not the boil.

Your grains need to steep longer than 10 minutes, prob at least 30
 
Yea, I got the idea of a 1 gallon biol from a friend, ideally I have never done that small of boil usually a full one.. Maybe ill steep the grains longer.. need to adjust some values..

thanks for the feedback, any thoughts on the bittering hops?
 
Sounds like your friend is giving you bad advice. If you only do a 1g boil you will need a lot more hops than you currently have listed (set the boil volume in beersmith to 1g and see). And actually, if you want an ipa with flavor and aroma you will need more than 3.5 oz. I usually have at least that much in the last 5 minutes, then another 2-3 oz for dryhop. I recommend a full boil if you can do it, then add the .5 of centennial at 15 or flameout, and adding another couple oz somewhere between 15 and flameout if you have more hops available.

If you aren't worried about a big hop flavor and nose, just brew as you have posted with these changes: as big of boil as you can, 30-45 min steep, and move the honey to either flameout or fermenter. Should be a good beer.

Also- re run your beersmith, your estimated gravityies both look low
 
thanks, maybe im doing something wrong in beer smith.. still learning about it used to doing it all manual..

Ill try to do a full boil.. also thanks for the advice on hops, I think I have enough but might need to make a trip, i also have Mt Hood, Magnum, Palisades, Warrior.. friend brought over some fresh stuff..

silly silly question, can u dry hop in the primary during fermentation or should I wait till secondary.. sorry never fully dry hopped before and worried about the hops in my carboy esp after they bloat might be hard to get out.

Try un-selecting the "calc boil volume" and set the boil volume to 1g. Also, you need to add the 6lbs of LME to the grainbill. It should be around 1.051 OG, 18.5 SRM, and IBU depend on the boil. When I ran what you had pictured + the LME through beersmith I got the following:

1g boil: 11 IBU
2.5g boil: 35.9 IBU
5g boil: 53.2 IBU
6.5g boil: same except for 58.2 IBU

As you can see by this, a larger boil greatly helps hop utilization. Personally, I would bitter with Magnum as it is clean and high AA%. Save the Centennial till later in the boil, say 15 minutes. If you want a more citrusy flavored Brown IPA, the warrior or palisades may play well with the centennial and cascade as late additions. I haven't ever used palisades but from their description sounds ok. Maybe something like:

1oz magnum @ 60
.5 oz centennial @ 15
.5 oz cascade @ 15
.5 oz warrior or palisade @ 5-flameout
.5 oz cascade @ 5-flameout
dryhop with centennial & warrior/palisade

This would give you help provide the bitterness (60 min), flavor (15 min), and aroma (5-flamout & dryhop). If you want less IBUs just dial back the 60 minute addition. Here is what the above would give you:
1g: 14.5 IBU
2.5g: 47.3 IBU
5g: 70.1 IBU
6.5: 76.8 IBU

No problem, let me know how it turns out. I was considering a brown IPA or something like dogfish head Indian brown sometime in the future.

Gonna try it today with your mods since I have all the hops here.. hopefully it turns out.. im still kinda wavering on when to put the honey in 30 min or flame out..

I would do flameout, or at least close to flameout for the honey addition. @30 all of the flavor and aromatics will be boiled off. Some may stay very late in the boil.
