So you all know I brewed my first beer, Heather amber ale on Jan. 2nd. Per my other post I stated it tasted ok..smelled weird and seemed to go flat. Well that was about a month ago. I was tinkering with the bike in the garage and thought F it...grabbed 3 bottles, tossed them in the fridge. Well Friday night rolls around and I crack one open DAMN ITS GOOD :ban:. Its got a great head...a really good flavor, nice kick and well..just damn good. I now know why you always have one in the back up. Its nice to know the only thing I goofed on my first brew was drinking to soon.

thanks again for all the advice you guys give here...off to beer 2

2 month beers are usually really good beers. brew some more drink some other craft beers and let em mellow.

I never drink a beer under 2 months old! One month in fermentors and one month bottle conditioning works fine for me. I was just going over the pipeline tonight. 3.25 gals of my IPA left at 10 weeks old and 6 grolsch bottles of my porter at 26 weeks left. My 80/- is only at 7 weeks old and my oktoberfast is only 5 weeks old, way too young to drink yet. If you are pressured to drink a beer before its time, time to brew more beer!

This should be made a sticky in the beginners forum. Short and to the point. It's beautiful.
