Aaaaannnyyyyway, beer. This was a solid cellar selection this evening:
08/13 Convivial Suarez. I think that's batch 2, but correct me if I'm wrong.
Stored at 55 degree cellar temp its entire life. Nice hiss upon opening but did not gush. Fine, creamy carbonation, very Brett dominant throughout, but there's a really nice Brett l cherry note in there that kept it from being full-on, stark barnyard. The body still had some nice malt character that shined through, and the finish was bone dry, with more funky cherry notes.
This profile is generally typical of a lot of HF/GR beers I've let go for even a couple years, much less almost 4, and I'll probably stick to my personal wheelhouse of 6-18 months with anything from them in this style realm, but it was an interesting and informative cellar experiment nonetheless.
