16.0 oz Lactose 20.0 min Boil
8.0 oz Cocoa Nibs 7.0 days Secondary
5.0 oz Cocoa Powder 15.0 min

I had a little too much water so I boiled for an extra 15 minutes.

Brewtoad had me at an estimated OG of 1.064 and a FG of 1.019.
However I came in at 1.075 OG and an FG of 1.03.

Thoughts of why the OG was higher?

I was worried about too much sugars after I bottled (bottle bombs) so I popped one open last night after being bottled for 3 days. Tasted pretty damn good and still light carbonation. So I think I'll be okay. Still a little sweet, which will hopefully scale back within the coming days.
 
Based on 5G recipe @ 75 efficiency Brewers Friend shows OG: 1.072 FG 1.024. So maybe some of your info in brewtoad was off.
 
Okay thanks. This was my first ever brew and I haven't used Brewers Friend before. But those estimates makes me feel better.
 
1.075 OG sounds about right.

1.030 is a high finish - that sweetness is not going to go away, unless it wasn't finished fermenting.

The Lactose is unfermentable and adds .007 to both the OG and FG, If we were to remove that from the numbers, you would have 1.068 to 1.023, which is not an unreasonable attenuation for a 154 mash.

I think it is done, and it is going to stay sweet.
