So I made a tripel with an alcohol content of about 13%. The yeast is rated for 12% (Wyeast 1214). I doubt it would make that much of a difference, but I was wondering what happens when you exceed the alcohol rating for the yeast? Do they just die, or slow down, or what?
 
If you exceed the tolerance and they run out of nutrients, the go dormant and flocculate out of the beer, leaving whatever residual sugars and bi-products they don't re-absorb behind. That's a pretty hardy yeast strain, so you may get more out of it that you think.
