So, I was brewing a winter warmer last night and was a little overwhelmed with what was going on with everything else but my brew. I know. Horrible. But I was toasting some 2 row and getting the water ready for my steep and I totally had a brain fart and got the water too hot.. Once the 2 row was done roasting, I just threw it in the water along with the rest of my grains.... The water was around 180.. And I took the heat off of it.. It slowly got down, and by the time my steep was over the water was around 160... I proceeded with the rest of my brewing process and once my yeast was pitched I took a gravity reading and got my exact OG that I was looking for so i put the lid on and let it start working. My question is, what could I have potentially done to my brew in a negative manner by having it steep at the higher temperatures...??

Depending on the grains you were steeping, possible tannins that may lead to a bitterness you didn't anticipate.

Proceed with your brewing and taste along the way. You might be ok.

Was there any noticeable off taste in your hydrometer sample? If not, you may be okay.
I usually pitch after aeration. If there is some spill from a bucket, no yeast will be lost.

No I did everything as I normally do, I just steeped the grains at too high a temp... I'm not really sure as to what the beer is supposed to taste like since it's my first time brewing it.. I tried a sample after I did my reading once the yeast was pitched and I got a very unusual taste.. Not sure if it was due to the amount of spices I put in. If that's what it will taste like once it's fermented and carbed up.. Not sure..?
