High OG?

Hallo all. Just finished my first extract with no kit. And no beer tools. This is my reciepe.

Boil size 6 gals
Batch size 5 gals ( ended up with around 5 gals)

6lbs of wheat dme (55% wheat 45% barley)

Special grains
1/2 lb veinna
1/2 lb munich

Hops (all pellets, all AA % same)
.05 nz nelson sauzen @ 60 min 11.8%aa
.05 cascadeb@20 mins 6.5% aa
.05 nz nelson sauzen 10 min
.05 cascade 5 min
.05 cascade flamout

Now I just checked my OG at 61 dagrees and im at around 1.060 to 1.061.

I pitches us-05 yeast. This is way higher than I expected, im assuming to much DME. Is 1 yeast packet of us-05 gonna cover this? Any input fellas? Please and thank you.
 
Chances are you'll be fine. I'm sure you under pitched if you go by a yeast calculator like mrmalty.com but I've had great success using dry yeast with brews around the same OG as yours. IMO you should always rehydrate the yeast before pitching though.

Well should I possible pitch a tad more? I dont have any on hand tho. I did not want a wheat beer this high in OG. I wanted a hoppy wheat around 5.5 ish

I wouldn't unless after 2 weeks you FG isn't where it should be. If it was healthy yeast I'm 95 percent certain it will be fine. When I first started brewing I brewed a bunch of high gravity ales and just pitched packets of dry yeast or even single vials of liquid yeast and never had a problem. I know that isn't preferred but like I said, my beer always came out good. I always use liquid yeast with starters now... but that's just because I want it to be as perfect as possible.
Did you aerate after pitching?

No just pitched about 15 mins ago, but i aerated before i pitched, pitxhed in kettle and dumped in primary. first time with that method. I can still give it a good shake. Were should my FG be?
 
Thanks earwig, that link doesn't seem to like my ipod touch right now. I'll take a look at it when I can, altho my computer is on the fritz at the moment.
