Hey guys, first post here so take it easy on me!

Just finished brewing my second batch of home brew last Saturday and post boil I had an OG reading of 67 gu's. I was shooting for 55 gu's. I figured that I would just roll with the higher gravity and have a stronger beer. Well I just took a gravity reading post fermentation and am at 7 gu's. That puts me at 8% abv. I was gonna rack this beer to secondary for 2 weeks and then bottle condition for 2 weeks.

So, finally to the question... With the higher abv do I need to bottle condition for longer? If so, how much longer?

Also, I haven't tasted the beer yet but I'm thinking about dry hopping in the secondary with 1 oz of centennial hops. How much of a hoppy flavor can I expect to get out the hops? It's a 5 gallon batch...

Higher abv beers will take longer to condition, how long? Only time will tell.
Dry hoping only adds aroma, flavours from hops are gotten from later additions in the boil apx 20 mins from the end of the boil.
What was your recipie?

Recipe:

11.4 lbs 2 row pale
1.1 lbs crystal

Mashed all grains at 152 degrees for 60 min.

.7 oz centennial hops at 60 min
1 oz cascade hops at 20 min
.5 oz cascade hops at 10 min

Used 8.3 total gallons of water and was about 1/2 gallon short.

Yeast is wyeast american pale

What's up with the secondary fermentor??? Help a brother out!
 
To secondary or not to secondary is a hot topic.

Personally, I primary for 2-4 weeks and then bottle/keg and have been just fine.
 
That is some serious efficiency if you're able to make 8%abv out of that grain bill! With a higher OG, you may want to boost your hops to balance out the recipe a bit for future brews.

In regards to your question, it may need slightly longer to condition and carbonate in the bottle due to the bigger brew. Give it 2-3 weeks and try one. If its still hot or doesn't taste right, give it another week or two and try again. Repeat as necessary until you're happy with it. That's the fun with this -- you (and whoever you give your beer to) are the only critic(s) that really matter!
 
If this is your second batch and you're at around 80% efficiency I'd say stick with your process!!
Like a previous poster said, for future batches you will need to adjust your hops up a little to keep everything in balance. Or you can lower your grain bill to take in to account your higher efficiency ( I think most recipes assume 70-75%). But congrats on your second all grain!!
