yesterday afternoon i brewed up my Skull Splitter clone (wee heavy scotch ale)
i could'nt follow the recipe exactly due to what my brew store had on hand so i made miner substitutions but only the wheat DME,and bittering hops, and im using Whirlfloc on recomendation of my supplier instead of Irish moss. but i think it will be fine...
however im using a hydrometer for the first time and i accidentally took my reading at about 90 deg which gave me 1.084-85. 11% but then i read that i should have taken the reading at around 60 deg.
my question to you is how can i calculate my actual gravity now?

anyhow the primary is doin its thing and i think this one might be kinda burly!

want the recipe???

5 gal.
O.G. 1.085 - 1.088
F.G. 1.018 - 1.022
IBU 26 SRM 22
ABV 8.5%

crush and steep in 1/2 gal. @ 150 deg for 20 min

10 oz. 55L British crystal malt
4 oz. Belgian aromatic malt
2 oz. light roasted barley
1 oz. peat-smoked malt

strain the grain water into your brew pot. Sparge the grains with 1/2 gal. @ 150 deg
add H2O to get 1.5 gal. bring to a boil, then remove from heat and add:

4 lb. M&F light DME (I used 3 lb. light DME & 1 lb. unhopped spray malt extract.)
1/2 lb. M&F wheat DME
6.6 lb. John Bull light malt syrup
2 oz. east Kent Goldings hops ( I used Domestic U.S. Goldings )

bring volume to 3 gal. and boil for 45 min.

add 1 tsp. Irish Moss. ( I used 1 Whirlfloc moss tablet )
boil for 15 min.

add water for 5 gal batch and pitch yeast @ around 80 deg.
1084 Irish ale yeast

Primary 5-7 days then siphon to the secondary and add 1/4 oz. steamed oak chips

bottle when fermentation is complete with:
1 1/4 cup M&F wheat DME.

Your OG is probably closer to 1.087~1.089. Your hydrometer should have come with a paper that had a scale informing you how many points to add or subtract for temperatures higher or lower than 60F. Mine reads as follows:

Temperature in degrees F.
50........subtract 1/2
60........0
70........add 1
77........add 2
84........add 3
95........add 5
105......add 7

Example:

If SG reading is 1.100 at 84F then add 3 (meaning .003) to the gravity to compensate. This means the true reading is 1.103.
 
Promash has a hydrometer correction calculator in it for this very reason. I put your OG of 1.084 in, adjusted for temp it's 1.088

The steeping grains do not add appreciably to the fermentables, only flavour and color. I calculated you DME, LME contribution using their respective sacc points and also came up with 1.008 by hand. IMHO, your'e gonna have a real skull splitter alright.....:)
