My first Hi-gravity Belgian is in secondary. I'm weeks away from bottling, but want to know what I may need to do differently to bottle (and carbonate) a beer like this.
I have been kegging most beers lately. But, I expect to leave this on the shelf for special guests that can appreciate it.

I've only had two beer not carb on me, and they were both high gravity that were secondaried. I guess too much yeast flocced out, or died. Now I don't hesitate and add rehydrated champagne yeast to the bottling bucket.
