Ok, so this is regarding my "Slinky Sauce" a Two Hearted Clone (Gluten Free, made from sorghum and brown rice extracts). Fermentation took place then I moved to secondary with a gelatin fining, now this is my issue, over the last 3 days I did hydrometer readings at around 60 degrees and they all come out consistent, which is good, however they are coming out high, at 1.022. It is time to bottle according to schedule, 14 days in primary and nearly a week in secondary but I am worried with such a high finishing level that I will make bottle bombs. Any suggestions?

I'd give it more time, double check your readings. But, also, I have no idea how your ingredients ferment or what their sugar content is. Let alone know the type of sugar in it.
