So I bottled my Blueberry Wheat yesterday and took my final gravity reading and it finished out at 1.021 a tad bit high. Should have finished at 1.012 - 1.014. Whats anyones educated guess as to why ? What are the common mistakes that occur that make the beers finish higher than they should ?
 
I left it in primary for a complete week then transferred to secondary filtering out all or most sediment. Had some activity in secondary for a few days then all complete. Its a extract kit from True Brew. And I guess I might have to question my temp. at boiling. Now I guess I have to ask what is the ideal temp to use, boiling point of water is 212 degrees is that to high ? Should I be adding contents at 170 or lower instead ?
 
mashing too high refers to all grain brewers, not in your case( an extract). When adding the extract generally its recommended to add them with only 15 minutes left in the boil. So you only need to boil as long as the latest hop addition. extracts finishing high is pretty common and could be due to unfermentables in the extract. Its one of the main reasons i moved to AG, more control.
 
Finally question on this subject. What does a higher then specified gravity mean to the end product ? Lower alcohol content higher alcohol content or really nothing to much to be concerned about ?

I'm still new to this but I believe if your OG was the predicted OG in the recipe but your FG was higher than the recipe suggested then your beer will be sweeter and have less alcohol.
