As I am a new brewer I do not want to screw this up. The bung is 1⅜ in diameter. I was thinking of drilling the hole a 1⅛. What do you all think?

Then a separate hole for a thermowell. But if you want to use a bung, use a step bit and you can start with a smaller hole and work you way up to the right sized hole.
