I have just started brewing beer about a month ago, but I’ve been brewing wine and cider for family for a few years now. So far I’ve brewed a batch of caribou slobber that is bottle conditioning right now and an experiment that’s not really beer because it doesn’t have malt or hops in it.
 
I don’t really know what to call it I wanted to practice an all grain brew and used up some pearl barley and oatmeal with cracked black pepper, coffee, and cocoa powder for flavor and bittering. I added sugar and corn syrup since I did not have any malt for fermentables. I tasted it yesterday and it tastes like chocolate soda.
 
Welcome fellow hillbilly! I'm from Nitro, and later Parkersburg. Wife is from Mt. Hope. When to SC once too many times and stayed. .... No snow! I've been brewing just over a year now. A winter lager is in the fermenter soon to go to lagering for a few weeks.
 
Thanks. We don’t get as much snow as I like it’s been freezing rain the last couple years more than snow. What makes a winter lager?

Sorry so long to respond ... family got in the way. Attached is the recipe for the winter lager. Lagers ferment and age in colder temperatures and Ales in higher temps.
